Ingredients: 2 large eggs. 2 oz cream cheese. 2 tbsp almond flour. 1/2 tsp baking powder. 1/2 tsp vanilla extract. Stevia or erythritol to taste. Butter or coconut oil for cooking.
Instructions: In a blender, combine eggs, cream cheese, almond flour, baking powder, vanilla extract, and sweetener. Blend until smooth. Heat butter or coconut oil in a non-stick skillet over medium heat. Pour small circles of batter onto the skillet to form pancakes. Cook for 2-3 minutes until bubbles form on the surface, then flip and cook for an additional 1-2 minutes until golden brown. Repeat with the remaining batter. Serve warm with sugar-free syrup or fresh berries.
