As lunar new year approaches, I'd like to share my mom's Chinese new year cake recipe. It's probably more like a pudding, as definition, but we call it a cake. This makes the perfect "not too sweet" nian gao. And it also doesn't stick to your teeth like a lot of nian gao. Edit: Recipe has been edited to include metric measurements as well as provide some dietary notes such as being gluten free.
2024 blaze edit: my mom had a massive stroke last March and it left her barely able to walk. She was an incredible cook and her head is full of the most wonderful recipes. I just felt this year, it was more important than ever to share some of those recipes so that even though she isn't able to cook for others herself, she can be cheered by the knowledge her recipes are still making ppl happy.

Mom’s Chinese New Year Cake (Nian Gao)
Yield: 3 cakes in 7” aluminum pans
Ingredients:
1 cup (250 ml) brown sugar
1 cup (250 ml) milk (cow milk can also be substituted for a plant-based milk if you prefer)
1 cup (250 ml) coconut milk
½ cup (125 ml) oil
3 eggs
1 bag glutinous rice flour (400 g)
1 tsp (5 ml) baking powder
Directions:
Grease three 7” pans and set aside. Preheat oven to 375°F (190°C).
Mix together sugar, milk, coconut milk, oil, and eggs. Then stir in dry ingredients and blend until smooth. You don’t have to worry about overworking the batter as it is made with glutinous rice flour, not wheat flour.
Divide it evenly amongst three greased pans.
Bake @ 375°F (190°C) for 40-50 minutes. All three can be baked at the same time in the oven. Just rotate where they are in the oven halfway for even browning.
Notes:
Cake should have nice brown crust on top and glutinous squishy sticky core.
Tastes better the next day and once fully cool.
If you don’t want a bunch of leftover coconut milk from the can, use the entire can of coconut milk and then add enough milk to get up to a full 2 cups (500 ml) of liquid.
Don’t skimp on the coconut milk. The recipe is simple enough that you will taste the difference.
This recipe is gluten free. Glutinous rice flour isn’t related to gluten.

The online Japanese course that no one talks about
Okay so I’m not a langblr and I never plan to be. However. What I do know from following a ton of them is that no one talks about Minato.
Now you may be thinking, ‘What’s Minato?’. It’s a website that was recommended to me by a Japanese Studies university professor for learning Japanse at home.
It’s literally the best resource out there and it’s free (funded by the Japanese government). You can choose between self-study and tutor support-led courses.
There are courses in Hiragana, Katakana, and the general language (from levels A1 to A2), and you can download a certificate and study record after completion of a course.

I’ve used this technique for about a year, and I can safely say that it has efficiently transformed my sleeping habits from several hours of struggle to fall asleep, to passing out in a matter of minutes.

This will be my first Ostara so I’ve been putting together my recipes for the event. The following recipe is a dairy and egg free cake with a hint of honey; a simple recipe I’ve modified. It can even be gluten free if you substitute a gluten free all purpose flour (I personally like Bob’s Mill) Perfect desert for the sabbat! It’s simple, not overly sweet, and I’ll be putting a light lemon glaze on top, but it would be wonderful plain. A perfect finish to bring in Spring/Summer.
3 1/2 cups all-purpose flour
1 cup granulated sugar
1 cup honey, warmed
2 teaspoons baking soda
1 teaspoon salt
2 tablespoons white vinegar
1 ½ tablespoon vanilla extract
1/2 cup + 2 tablespoons oil
2 cups water
Directions:
Preheat oven to 375 degrees. Grease 2 – 9 inch round cake pans then dust with flour. Warm honey in 10 second intervals in microwave until it moves around bowl like a liquid (DO NOT let it boil) Add the flour, sugar, honey, baking soda, and salt to a large bowl. Add the water, oil, vinegar, and vanilla. Mix with a whisk until well-blended. Do not over beat. It will still turn out even if there are a few small lumps. Divide the batter between the 2 greased cake pans. Bake on a middle rack of oven for 35 minutes or until an inserted toothpick comes out clean. Let cool before frosting, dust with powdered sugar, or dive in while warm with a fork. Mmm, tasty!🐰🐥🐏🍰

I’ve seen this kind of thing before and a lot of them are full of random weird shit you’d never make…because of time constraints or like, it just sounds super gross.
But this one had a whole section that’s just “Things on Toast”. Another that was all about putting crap in your oatmeal to make it better. Those are fairly pedestrian and don’t take forever.
I haven’t looked through the whole thing yet but so far it’s actually pretty practical. Also if you’re broke like me and don’t know how to make Dal, you should get on that.

Also, a plus; Norse style apron dresses are comfy as all hell and tbh should never have gone out of style, because again comfy as all hell. You can dress them up with beads and shinies! You can dress them down for work! You can use linen for cool breathable comfort in the summer or wool for warmth in winter! It’s truly versatile!
I already have some plain unbleached linen laying around that I can make the underdress out of, though I’ll likely get more colored linen to make a fancy one too later.
The linen website might just be life changing. My personal recommendation is always Burnley and Trowbridge. Their stuff is amazing quality and their reproduction scarves are to die for.
