These keto chocolate chip cookies are chewy and tasty, but they don't have many carbs. These cookies, which are made with sugar-free chocolate chips, almond flour, and coconut flour, are a great way to satisfy your sweet tooth while staying on the keto diet.
Ingredients: 1 1/2 cups almond flour. 1/4 cup coconut flour. 1/2 cup unsalted butter, softened. 1/2 cup granulated erythritol sweetener. 1 large egg. 1 teaspoon vanilla extract. 1/2 teaspoon baking powder. 1/4 teaspoon salt. 1/2 cup sugar-free chocolate chips.
Instructions: Preheat oven to 350F 175C. Line a baking sheet with parchment paper. In a mixing bowl, cream together the softened butter and erythritol sweetener until light and fluffy. Add the egg and vanilla extract to the mixture, and beat until well combined. In a separate bowl, whisk together the almond flour, coconut flour, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms. Fold in the sugar-free chocolate chips. Using a cookie scoop or spoon, drop rounded tablespoons of dough onto the prepared baking sheet, leaving space between each cookie. Gently flatten each cookie with the back of a spoon or your fingers. Bake in the preheated oven for 10-12 minutes, or until the edges are golden brown. Remove from the oven and let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
