Some tips to make it more interesting:
chili oil. fry up your veggies with a little bit of chili oil and soy sauce. adds some spice but not overwhelmingly so.

if you like crunch, add some roasted pumpkin seeds or sunflower seeds at the end of cooking. i buy them in bulk and throw them on a lot of recipes just because.
