I based this Caramel Coffee Tart on the caramel macchiato coffee I used to get when I was younger. The drink is too sweet for me now but the flavours make for a fantastic tart! Another week in May, another birthday! My husband celebrates his birthday this week so I’ve made home a Banana’s Foster Layer Cake. Not the prettiest scone ever, but boy is it tasty! I took my regular scone recipe but instead of putting fruit in before rolling the dough into a log to cut, I spread some chocolate hazelnut spread. It came out like a cross between a scone and a babka and was absolutely delicious! It’s my dad’s birthday this week! He’s a very hard person to shop for, but he loves lemon meringue pie. So I’ve made him this lemon meringue tart that I will drive down to Toronto for him today. Who else has heard of Anadama bread? I’m baking a batch of Boston baked beans and had to bake some of this bread to go with it! This loaf has some cornmeal and molasses in it to give it its distinctive flavour and texture. The story goes that a Boston area fisherman was tired of the molasses porridge so one day he threw in some flour and yeast and put put it in the oven to bake. While it baked, he sat muttering « Anna damn her!» (picture it being said in a Boston accent) and the name was born. I’ve been working on perfecting this French Lemon-Lime Tart for a few weeks and finally got the recipe perfect! There is lemon or lime in every single layer of this tart! The crust is flavoured with lime zest, the filling is a French lemon cream filling and the top is a lime ganache cream. It is wonderfully tart but the tartness is balanced by the ganache cream on top. Such a pretty and refreshing tart! I wanted to try making another stuffed cookie so I took my Next Level Chocolate Chip Cookie batter and stuffed some chocolate ganache in the middle. They are so good! The cookies are crispy on the out side and chewy in the middle with a centre of gooey chocolate ganache. Definitely a recipe to do again! Happy Easter! To celebrate I made an Easter egg entremet. I wish I could say that they all looked this good but the mousse didn’t freeze as solidly as it should have even though it was in the freezer overnight so I had trouble moving the eggs onto the bases. Inside is a lemon mousse with a blueberry gelée centre.
