Ingredients: 2 ripe bananas, mashed. 1 cup all-purpose flour. 1 teaspoon baking soda. 1/2 teaspoon baking powder. 1/4 teaspoon salt. 1/2 cup unsalted butter, softened. 1 cup granulated sugar. 2 large eggs. 1 teaspoon vanilla extract. 1/2 cup buttermilk. For Cream Cheese Frosting:. 8 oz cream cheese, softened. 1/2 cup unsalted butter, softened. 2 cups powdered sugar. 1 teaspoon vanilla extract. For Parfait Layers:. Crumbled banana cake. Cream cheese frosting. Sliced bananas.
Instructions: Set the oven to 350F 175C and heat it up. Butter and flour a cake pan. Mix the flour, baking soda, baking powder, and salt in a bowl with a whisk. Put away. Mix the butter and sugar in a different bowl until the mixture is light and fluffy. Slowly add the eggs, making sure to mix well after each one. Add vanilla extract and mashed bananas and mix well. Slowly add the dry ingredients to the banana mixture while mixing in the buttermilk every so often. Don't mix any further than that. Put the batter into the cake pan that has been prepared. Bake for 25 to 30 minutes, or until a toothpick stuck in the middle comes out clean. Let the cake cool all the way down. Cream cheese frosting: Beat cream cheese, butter, powdered sugar, and vanilla extract together until the frosting is smooth and creamy. Break the cake up into little pieces when it's cool. Put layers of crumbled banana cake, cream cheese frosting, and sliced bananas in serving glasses. Do this again and again until the glass is full.
