Ingredients: 2 sweet potatoes, spiralized into noodles. 2 tablespoons vegetable oil. 1 onion, thinly sliced. 2 cloves garlic, minced. 1 red bell pepper, thinly sliced. 1 yellow bell pepper, thinly sliced. 1 cup broccoli florets. 1 carrot, julienned. 1/2 cup snow peas, trimmed. 1/4 cup soy sauce. 2 tablespoons hoisin sauce. 1 tablespoon rice vinegar. 1 tablespoon sesame oil. 1 tablespoon honey. 1/2 teaspoon red pepper flakes adjust to taste. Salt and pepper to taste. Sesame seeds and chopped green onions for garnish.
Instructions: In a small bowl, whisk together soy sauce, hoisin sauce, rice vinegar, sesame oil, honey, and red pepper flakes. Set aside. Heat vegetable oil in a large skillet or wok over medium-high heat. Add onions and garlic to the skillet and stir-fry for 2-3 minutes until fragrant and slightly softened. Add sweet potato noodles, red and yellow bell peppers, broccoli, carrot, and snow peas to the skillet. Stir-fry for 5-6 minutes until the vegetables are tender and the noodles are cooked but still slightly firm. Pour the sauce over the noodles and vegetables. Toss everything together and cook for an additional 2 minutes until the sauce thickens and coats the ingredients evenly. Season with salt and pepper to taste.
