Ingredients: 1 lb chicken breast, thinly sliced. 8 small flour tortillas. 1/4 cup Greek yogurt. 2 tablespoons olive oil. 2 tablespoons lemon juice. 2 cloves garlic, minced. 1 teaspoon dried oregano. Salt and pepper to taste. 1 cup fresh parsley leaves. 1/4 cup fresh cilantro leaves. 2 tablespoons red wine vinegar. 1/2 teaspoon red pepper flakes. 1/4 cup olive oil.
Instructions: In a bowl, mix Greek yogurt, olive oil, lemon juice, minced garlic, dried oregano, salt, and pepper. Add sliced chicken breast to the marinade and coat well. Let it marinate in the fridge for at least 30 minutes. Meanwhile, prepare the chimichurri sauce. In a food processor, combine parsley, cilantro, garlic, red wine vinegar, red pepper flakes, salt, and olive oil. Pulse until well combined but still slightly chunky. Preheat grill to medium-high heat. Remove chicken from marinade and discard excess marinade. Grill chicken for 4-5 minutes per side or until cooked through and slightly charred. Warm tortillas on the grill for about 30 seconds per side. Assemble tacos by placing grilled chicken on warmed tortillas and topping with chimichurri sauce. Serve immediately and enjoy!
