The inside of these vegan soft pretzels is fluffy, and the outside is just the right amount of chewy. They are great as a snack or starter for any event.
Ingredients: 1 cup warm water. 2 1/4 teaspoons active dry yeast. 1 tablespoon granulated sugar. 2 1/2 cups all-purpose flour. 1 teaspoon salt. 2 tablespoons vegan butter, melted. 3 tablespoons baking soda. 2 cups warm water, for baking soda bath. Coarse salt, for topping.
Instructions: In a bowl, combine warm water, yeast, and sugar. Let it sit for 5-10 minutes until frothy. Add flour, salt, and melted vegan butter to the yeast mixture. Mix until a dough forms. Knead the dough on a floured surface for about 5 minutes until smooth. Place the dough in a greased bowl, cover it, and let it rise in a warm place for 1 hour, or until doubled in size. Preheat the oven to 450F 230C. Line a baking sheet with parchment paper. In a shallow dish, mix baking soda with 2 cups of warm water until dissolved. Divide the dough into 8 equal pieces. Roll each piece into a long rope and shape into a pretzel. Dip each pretzel into the baking soda bath for 30 seconds, then place them onto the prepared baking sheet. Sprinkle pretzels with coarse salt. Bake for 10-12 minutes or until golden brown. Let the pretzels cool slightly before serving.
