Ingredients: 1 lb large shrimp, peeled and deveined. 1/4 cup chopped fresh cilantro leaves. 3 cloves garlic, minced. 2 tablespoons olive oil. 2 tablespoons lime juice. 1 teaspoon lime zest. Salt and pepper to taste. 1 cup jasmine rice. 1 cup coconut milk. 1 cup water. 1 tablespoon butter. Lime wedges, for serving.
Instructions: In a bowl, combine shrimp, cilantro, garlic, olive oil, lime juice, lime zest, salt, and pepper. Toss until shrimp are evenly coated. Let marinate for 15-30 minutes. In a medium saucepan, combine jasmine rice, coconut milk, water, and butter. Bring to a boil, then reduce heat to low. Cover and simmer for 15-20 minutes, or until rice is cooked and liquid is absorbed. While the rice is cooking, heat a large skillet over medium-high heat. Add the marinated shrimp and cook for 2-3 minutes per side, or until pink and cooked through. Serve the shrimp over the coconut rice, garnished with lime wedges. Enjoy!
