Ingredients: 4 boneless, skinless chicken breasts. 1/4 cup fish sauce. 2 tablespoons soy sauce. 2 tablespoons honey. 2 cloves garlic, minced. 1 teaspoon ginger, minced. 4 Vietnamese baguettes or French rolls. 1 cup shredded carrots. 1 cup cucumber slices. 1/2 cup fresh cilantro leaves. 1/4 cup mayonnaise. 1 tablespoon Sriracha sauce. Lettuce leaves for garnish. Cooking oil for grilling.
Instructions: In a bowl, combine fish sauce, soy sauce, honey, minced garlic, and minced ginger to create a marinade. Place chicken breasts in a zip-top bag and pour the marinade over them. Seal the bag and marinate in the refrigerator for at least 30 minutes. Preheat your grill to medium-high heat and brush it with cooking oil to prevent sticking. Grill the marinated chicken breasts for about 6-8 minutes per side, or until they are cooked through and have nice grill marks. Brush with leftover marinade during grilling. While the chicken is cooking, split the baguettes or rolls in half and lightly toast them on the grill. In a small bowl, mix mayonnaise and Sriracha sauce to make a spicy mayo. Once the chicken is done, remove it from the grill and let it rest for a few minutes before slicing it into thin strips. To assemble the sandwiches, spread a generous amount of spicy mayo on the toasted baguette or roll halves. Layer the grilled chicken, shredded carrots, cucumber slices, and fresh cilantro leaves on top of the mayo. Add a few lettuce leaves for garnish and extra crunch. Serve your Vietnamese Grilled Chicken Sandwiches immediately, and enjoy!
