Ingredients: 1 cup quinoa. 2 cups cooked chickpeas. 2 cups dandelion greens, chopped. 1/4 cup olive oil. 2 tablespoons balsamic vinegar. 1 teaspoon Dijon mustard. 1 clove garlic, minced. Salt and pepper to taste. 1/4 cup feta cheese, crumbled optional. 1/4 cup chopped fresh parsley. 1/4 cup toasted pine nuts.
Instructions: Rinse quinoa under cold water and cook according to package instructions. Once cooked, fluff with a fork and let it cool. In a large bowl, combine cooked chickpeas and chopped dandelion greens. In a small bowl, whisk together olive oil, balsamic vinegar, Dijon mustard, minced garlic, salt, and pepper to make the dressing. Pour the dressing over the chickpeas and greens, tossing to coat evenly. Let it marinate for at least 15 minutes. Add the cooled quinoa to the marinated chickpea and greens mixture. Toss to combine. Sprinkle crumbled feta cheese if using, chopped fresh parsley, and toasted pine nuts over the salad. Toss the salad gently once more and adjust salt and pepper to taste.
