Ingredients: 1 cup raw hazelnuts. 1 cup dates, pitted. 1/2 cup raw cacao powder. 1/4 cup maple syrup. 1/4 cup coconut oil, melted. 2 cups raw cashews, soaked overnight. 1/2 cup coconut milk. 1/4 cup agave syrup. 1/4 cup cocoa powder. 1/4 cup hazelnut butter. 1 teaspoon vanilla extract. Pinch of salt.
Instructions: In a food processor, blend hazelnuts until finely ground. Add dates, cacao powder, maple syrup, and coconut oil. Process until mixture forms a sticky dough. Press dough into the bottom of a lined cake pan to form the crust. Place in the freezer to set. In a blender, combine soaked cashews, coconut milk, agave syrup, cocoa powder, hazelnut butter, vanilla extract, and salt. Blend until smooth and creamy. Pour the cheesecake filling over the crust in the cake pan. Smooth the top with a spatula. Place the cheesecake in the freezer for at least 4 hours, or until set. Once set, remove from the freezer and let it sit at room temperature for a few minutes before slicing. Serve chilled, garnished with chopped hazelnuts or a drizzle of melted vegan chocolate if desired.
