This quick and easy tofu stir-fry with cabbage and peppers is ideal for a busy weeknight. The tofu adds protein, and the vegetables add color and nutrition.
Instructions: Heat the vegetable oil in a large skillet over medium-high heat. Cook for 3-4 minutes, or until the tofu is lightly browned, in the skillet. Cook for another 2-3 minutes after adding the sliced bell peppers to the skillet. Cook for 3-4 minutes, or until the cabbage is tender, in the skillet. Whisk together the soy sauce, rice vinegar, cornstarch, garlic powder, and 1/4 cup water in a small bowl. Stir the sauce into the tofu and vegetables to combine. Cook for another 2-3 minutes, or until the sauce thickens. Season to taste with salt and pepper. Serve immediately and enjoy.
