Instructions: In a large skillet over medium-high heat, heat 1 tablespoon olive oil. Sear scallops until golden brown, about 2-3 minutes per side, seasoning with salt and black pepper. Place aside. Saut the garlic in the remaining olive oil in the same skillet until fragrant. Add the collard greens and saut for 3-4 minutes, or until wilted. Continue to saut for another 2-3 minutes, or until the asparagus is tender-crisp. Squeeze lemon juice over the vegetables and season to taste with salt and black pepper. Plate the vegetable mixture and top with the seared scallops. Serve right away.
