A unique twist on traditional s'mores, these marshmallows are infused with the flavors of peanut butter, banana, and bacon. Perfect for campfires or a sweet indulgence anytime.
Ingredients: 1 cup granulated sugar. 1/2 cup light corn syrup. 1/4 cup water. 2 tablespoons unflavored gelatin. 1/4 cup cold water. 1/2 cup creamy peanut butter. 1 ripe banana, mashed. 4 strips cooked bacon, crumbled. 1 teaspoon vanilla extract. 1/4 teaspoon salt. Powdered sugar for dusting. Graham crackers. Chocolate squares. Marshmallow skewers or sticks.
Instructions: Mix 1/4 cup cold water and the gelatin in a small bowl. Give it ten minutes or so to bloom. Place 1/4 cup water, corn syrup, and granulated sugar in a saucepan over medium heat. After stirring to dissolve the sugar, bring it to a boil and monitor the temperature with a candy thermometer until it reaches 240F 115C. Beat the gelatin mixture in a stand mixer until frothy while the sugar syrup heats. With the mixer running at a low speed, slowly pour the sugar syrup into the frothy gelatin mixture once it reaches the desired temperature. Once the mixture is thick and glossy, increase the mixer speed to high and beat for ten to fifteen minutes. To the marshmallow mixture, add the peanut butter, mashed banana, bacon bits, vanilla extract, and salt. Beat until thoroughly mixed. To keep the marshmallow mixture from sticking, dust a baking dish with powdered sugar before adding the marshmallow mixture and using a spatula to smooth the top. Once it's firm, let it set for a few hours at room temperature or for approximately one hour in the refrigerator. When the marshmallow is set, cut it into squares and sprinkle more powdered sugar on top to keep it from sticking. A piece of marshmallow and a square of chocolate are sandwiched between two graham crackers to make a s'more. The marshmallow and chocolate are toasted and melted over a campfire or with a kitchen torch. Savor the peanut butter, banana, bacon, and marshmallow S'mores treats!
