These Curried Lentil Lettuce Wraps are a tasty and healthy vegan meal idea. Spices are used to cook the lentils, which are then wrapped in crisp lettuce leaves and topped with a tasty Sriracha peanut sauce.
Ingredients: 1 cup dry lentils, rinsed and drained. 2 cups vegetable broth. 1 tablespoon olive oil. 1 onion, finely chopped. 2 cloves garlic, minced. 1 tablespoon curry powder. 1 teaspoon ground cumin. 1/2 teaspoon turmeric powder. Salt and pepper to taste. 8 large lettuce leaves, washed and dried. 1/4 cup peanut butter. 2 tablespoons soy sauce. 1 tablespoon maple syrup. 1 tablespoon sriracha sauce. 1 tablespoon rice vinegar. 2 tablespoons water. 1 tablespoon sesame seeds, for garnish. Fresh cilantro leaves, for garnish.
Instructions: Put lentils and vegetable broth in a medium saucepan. Bring to a boil, then lower the heat and let it cook for 20 to 25 minutes, until the lentils are soft. Remove any extra liquid and set it aside. Warm up the olive oil in a big pan over medium-low heat. It will take about 5 minutes of cooking after adding the chopped onion and garlic. Add salt, pepper, cumin, turmeric, and curry powder. Stir it all in. For another two minutes, cook until the food smells good. Add the cooked lentils to the pan with the onions. Mix everything together, then cook for another 5 minutes to let the flavors blend. To make the sauce, mix peanut butter, soy sauce, maple syrup, sriracha sauce, rice vinegar, and water in a small bowl with a whisk. Place a small amount of the lentil mixture on top of each lettuce leaf to make the lettuce wraps. Put sriracha peanut sauce on top and then sesame seeds and cilantro leaves on top of that. Serve right away and enjoy!
