African Piri Piri Roast Chicken, which is another name for Peri Peri Chicken, is a tasty and spicy dish made with a mix of herbs, spices, and fresh chilies. The inside is juicy, and the outside is crispy. It's great for a hearty meal.
Ingredients: 1 whole chicken. 4 cloves garlic, minced. 2 tablespoons paprika. 2 tablespoons lemon juice. 2 tablespoons olive oil. 1 teaspoon dried oregano. 1 teaspoon dried thyme. 1 teaspoon salt. 1 teaspoon black pepper. 1-2 fresh red chilies, finely chopped adjust to taste.
Instructions: Preheat the oven to 200C 400F. In a small bowl, mix together garlic, paprika, lemon juice, olive oil, oregano, thyme, salt, black pepper, and chopped chilies to make the peri peri marinade. Place the whole chicken in a roasting pan and rub the peri peri marinade all over the chicken, making sure to coat it evenly. Cover the chicken and let it marinate in the refrigerator for at least 30 minutes, or preferably overnight for best flavor. Once marinated, place the roasting pan in the preheated oven and roast the chicken for about 1 hour or until cooked through, basting occasionally with the juices in the pan, until the chicken is golden brown and juices run clear when pierced with a knife. Remove the chicken from the oven and let it rest for 10 minutes before carving. Serve hot with your favorite sides and enjoy!
