Ingredients: 2 boneless, skinless chicken breasts, diced. 1 cup sliced mushrooms. 1 tablespoon olive oil. Salt and pepper to taste. 4 large flour tortillas. 2 cups shredded cheese cheddar or Mexican blend. 1 cup shredded carrots. 1 cup diced mango. 2 tablespoons chopped cilantro. 2 tablespoons lime juice. 1 tablespoon honey. 1/4 teaspoon chili powder. 1/4 teaspoon cumin.
Instructions: Put olive oil in a pan and heat it over medium-low heat. Put in mushrooms and chicken that has been cut up. Cook the mushrooms and chicken until they are soft and no longer pink. Add pepper and salt to taste. In the pan, put one tortilla. Add some shredded cheese on top. Add the cooked chicken and mushroom mix on top. Put one more tortilla on top of it. First cook the bottom tortilla until it turns golden brown and the cheese melts. Then turn it over and cook the other side. Do it again with the rest of the tortillas and filling. Diced mango, chopped cilantro, lime juice, honey, chili powder, and cumin should all be put in a bowl together. Toss until everything is well combined. While the quesadillas are still hot, put the mango and carrot slaw on the side.
