Curried Yogurt Sauce goes well with a tasty and healthy Chickpea Burger. These homemade veggie burgers are full of protein and spices, so any burger lover can enjoy them without the meat.
Ingredients: 1 15-ounce can chickpeas, drained and rinsed. 1/2 cup breadcrumbs. 1/4 cup red onion, finely chopped. 1/4 cup red bell pepper, finely chopped. 1/4 cup fresh cilantro, chopped. 1 clove garlic, minced. 1 teaspoon ground cumin. 1/2 teaspoon paprika. Salt and pepper to taste. 4 burger buns. 1 cup Greek yogurt. 1 teaspoon curry powder. 1 tablespoon lemon juice. Lettuce, tomato, and red onion slices for garnish.
Instructions: Put breadcrumbs, red onion, red bell pepper, cilantro, garlic, cumin, paprika, salt, and pepper in a food processor and blend them all together. Pulse the ingredients together until they are mostly smooth but still have some chunks. Make burger patties out of the four equal parts of the mixture. Spread cooking spray or oil on a grill or skillet and heat it over medium-high heat. They should be cooked for four to five minutes on each side, or until they are firm and golden brown. To make the curry yogurt sauce, mix Greek yogurt, curry powder, and lemon juice in a small bowl with a whisk. You can grill or toast the burger buns until they are just barely crispy. Use a lot of curried yogurt sauce to cover the bottom half of each bun. A chickpea patty should be put on top of the sauce. Then lettuce, tomato, and red onion slices should be added. Spread the other half of the bun on top of the burger, and then serve it with the curried yogurt sauce.

Ingredients: 1 cup bulgur. 1 can 15 oz chickpeas, drained and rinsed. 1 cup grated carrots. 1 cup finely chopped spinach. 1/2 cup diced red bell pepper. 1/4 cup finely chopped red onion. 2 cloves garlic, minced. 1 teaspoon ground cumin. 1 teaspoon paprika. 1/2 teaspoon salt. 1/4 teaspoon black pepper. 1/4 cup breadcrumbs. 4 whole wheat burger buns. Toppings of choice: lettuce, tomato, avocado, mustard, etc..
Instructions: Bring 2 cups of water to a boil in a medium-sized saucepan. Cover, add the bulgur, and turn down the heat to low. Let it cook on low heat for 12 to 15 minutes, or until the bulgur is soft and the water is gone. Use a fork or potato masher to mash the chickpeas in a large mixing bowl. Grate the carrots, chop the spinach, dice the red bell pepper, chop the red onion, mince the garlic, add the cumin, paprika, salt, black pepper, and breadcrumbs. Mix everything together well. Make 4 burgers out of the mix. Put the nonstick skillet on medium heat and lightly oil it. For four to five minutes on each side, or until golden brown and hot all the way through, cook the patties. If you want, you can toast the burger buns. Put the burgers together with the toppings you want. Enjoy while hot!

Pulse the ingredients together until they form a thick paste. After adding the baking powder, stir it in and let it sit for 15 minutes. Make burger patties out of the four equal parts of the mixture. Set a pan on medium heat and add oil. Before you serve the falafel burgers, make sure they are golden brown on both sides. In the same pan, toast the burger buns until they are just barely golden. Put lettuce leaves, tomato slices, red onion slices, and a falafel patty on the bottom bun to make the burgers. Add tahini sauce on top. Put the other half of the bun on top and serve hot.
