Hi everyone! It's been a while so I thought I should share this amazing bread I made a few weeks ago.
Cinnamon Roll Bread!
I used regular bread dough to make this plaited loaf so once it has risen once for about 3 hours (or doubled in size) I split the dough into 3 pieces and rolled them out into long thin rectangles. I covered each of the plait pieces with cinnamon sugar.
Then I rolled it up back into a sausage shape and pinched the edges to seal it
I plaited the 3 pieces of dough and brushed it all over with melted vegan butter before leaving it to rise (maximum 1 hour)
I baked it at 200Β°c for about 25-30 minutes until the bottom sounded hollow.
Brush with more melted vegan butter and serve!! Honestly so good! Like a cinnamon roll crossed with a loaf of bread π

Long time no see!
I just had to pop back on here to share this incredible bread I just made; vegan cheese and pickle loaf!
I was making a plaited loaf so I simply rolled each piece flat and stuffed it with Branston pickle and @violife_foods vegan cheese. Then more cheese on top of course! Just too delicious ππ

Long time no see! I just had to pop back on to share my newest favourite thing to do with oat pulp; a GIANT MICROWAVE COOKIE! πͺπͺ
I have tried a baked cookie with oat pulp but it just didn't work, unpleasantly slimy in the middle, but this is just perfect. It's more bready than like a cookie but absolutely delicious anyway.
dEATS
- 1 batch oat pulp
- 2 or 3 heaped dessert spoons self raising flour
- 2 or 3 tsp liquid sweetener (I used @sweetfreedomuk)
- chocolate chips (vegan galaxy was my choice)
- vegan Nutella to stuff the cookie (I used JimJams)
-mix together the oat pulp, sweetener, flour and choc chips
-place half the dough on a lined microwaveable plate and then blob some vegan Nutella on top before covering with the rest of the dough
-microwave on high for 2 minutes or until it is cooked on the outside.
-let it cool for 5 minutes then enjoy!

Rather chuffed with this vegan (no bake) cheesecake that I made! It was so tasty and I will absolutely be making it again.
For the base I made shortbread, but using vegan biscuit crumbs and vegan butter to bind works too.
The filling was simply half a tub of violife cream cheese, a little non-dairy milk, and icing sugar to taste, all whisked together until fully mixed.
Then construct and enjoy! Mine made two individual cheesecakes π

I made such good bread this week! Breadmaking is one of my weekly weekend routines and it's so calming, I love it! I finally managed to get the big sourdoughy bubbles in it and it was so chewy and delicious.

I have possibly made the best cookie dough hummus I've ever made and it was so simple! I added to a blender 1 tin of chickpeas, about 3 tbsp cashew butter, 2-3 tbsp Sweet Freedom vanilla syrup and 2 pinches of flaky salt. Blend it up and voilΓ !
I like it so loaded onto rice cakes that there's more topping than rice cake π

A super simple but delicious tea ππ
I chopped and roasted a random selection of veg (I think I did parsnip, celery, carrot, turnip and tofu) and I made a quick tomato sauce. Then I piled it all on top of two thick slices of sourdough toast and butter. Absolute perfection βοΈπ

It's been a busy few weeks for me so here's just a snippet π₯°
So for ages I have been so skeptical of all the people who put Tahini on basically everything because I just find the taste too harsh in anything that's not hummus. I have just tried LiquidGold tahini and my mind has been changed! Honestly so good π€ I had it on top of my porridge bowl with banana and Sweet Freedom vanilla syrup. So good!

A delicious dinner from last week consisting of homemade pasta noodles, vegan bolognese using the aldi plant based mince and corn on the cob!

I made some rather delicious oaty chocolate chip cookies the other day and I though I would share the recipe with you all!
dEATS
100g margarine
100g sugar
125g golden syrup
80g oats
170g self raising flour
1 tsp cinnamon
Choc/raisins
-Beat the marg and sugar together until light and fluffy.
-Add the golden syrup and mix to combine.
-Add everything else and roll into balls, pressing slightly flat with a hand.
-Bake in a preheated oven at 180c for 10 minutes or until the top is just turning golden.
Enjoy!
