, QUESADILLAS!
I made a mix of vegetables I had in my kitchen: onions, pepper, tomatoes, zucchinis.
I put first olive oil in a frying pan, then my onions, and grate ginger. Then I added pepper, tomatoes, basilic and oregano. I covered for few minutes. And at the end I added the zucchinis. I put them last becaue it takes less time to cook.
To do your quesadilla, you take another frying pan and put a tortilla on it. You can after this put on a half of the tortilla grated cheese, a bit of your vegetable mix another layer of cheese. Fold your tortilla in 2. Wait few minutes (2-3 min) so the cheese melt and then return your tortilla (tricky part ), wait 2-3min again and itâs ready to serve.
You can decide to put whatever you want on it. Adding spices makes it more tasty but if you already have really good vegetables itâs not necessary.
