Ingredients: 1 cup quinoa, cooked. 1 cup edamame, shelled and steamed. 1 cup cherry tomatoes, halved. 1/2 cucumber, diced. 1/4 cup red onion, finely chopped. 1/4 cup fresh cilantro, chopped. 1/4 cup extra-virgin olive oil. 2 tablespoons balsamic vinegar. 1 tablespoon Dijon mustard. Salt and pepper to taste.
Instructions: In a large bowl, combine cooked quinoa, steamed edamame, cherry tomatoes, cucumber, red onion, and cilantro.
