Enjoy these delicious cupcakes that have mint, white chocolate, and mocha flavors all mixed together. Great for any event or just because you want something sweet.
Ingredients: 1 1/2 cups all-purpose flour. 1/2 cup unsweetened cocoa powder. 1 cup granulated sugar. 1/2 cup unsalted butter, softened. 2 large eggs. 1/2 cup whole milk. 1/2 cup strong brewed coffee, cooled. 1/2 cup white chocolate chips. 1 tsp baking powder. 1/2 tsp baking soda. 1/2 tsp salt. 1 tsp peppermint extract. 1/2 tsp vanilla extract.
Instructions: Warm your oven up to 350 F 175C and put paper liners in a cupcake tin. Put the cocoa powder, baking powder, baking soda, and salt in a bowl and sift them together. Melt the butter and mix it with the sugar in another bowl until the mixture is light and fluffy. One at a time, add the eggs and beat well after each one. Put the vanilla and peppermint extracts in and mix them in. Each time you add the milk and cooled coffee, you should start with the dry ingredients and end with them. Don't mix any further than that. The white chocolate chips should be carefully mixed in. Fill each cupcake liner about two thirds of the way to the top with batter. After the oven is hot, bake the cupcakes for 18 to 20 minutes, or until a toothpick stuck in the middle comes out clean. First, let the cupcakes cool in the pan for a few minutes. Then, move them to a wire rack to cool completely. You can decorate your cupcakes however you like after they have cooled. You can frost them with your favorite white chocolate or mocha frosting. Enjoy your Minty White Chocolate Mocha Cupcakes!
