Ingredients: 1 cup quinoa, rinsed. 2 cups water. 1 ripe avocado, diced. 1 cup cherry tomatoes, halved. 1/4 cup red onion, finely chopped. 1/4 cup fresh cilantro, chopped. 2 tablespoons olive oil. 2 tablespoons fresh lime juice. Salt and pepper to taste.
Instructions: Bring water to a boil in a saucepan. Lower the heat, cover, and let the quinoa cook for 15 minutes, or until all the water is absorbed. Take it off the heat and let it cool down. Put cooked quinoa, diced avocado, cherry tomatoes, red onion, and cilantro in a large bowl. Mix olive oil, lime juice, salt, and pepper in a small bowl with a whisk. Add the dressing to the salad and gently toss to mix. Let it sit at room temperature or in the fridge.
