These light crepes are filled with a rich mascarpone cheese and have fresh apricots and a sweet apricot glaze on top. They taste great for breakfast or dessert.
Ingredients: 1 cup all-purpose flour. 2 tablespoons granulated sugar. 1/4 teaspoon salt. 2 large eggs. 1 1/4 cups whole milk. 2 tablespoons unsalted butter, melted. 1 cup mascarpone cheese. 1/4 cup powdered sugar. 1 teaspoon vanilla extract. 4 ripe apricots, sliced. 1/4 cup apricot preserves. Powdered sugar, for dusting optional. Fresh mint leaves, for garnish optional.
Instructions: In a mixing bowl, whisk together the flour, granulated sugar, and salt. In another bowl, beat the eggs, then add the milk and melted butter. Mix well. Gradually add the wet ingredients to the dry ingredients, whisking until the batter is smooth. Heat a non-stick skillet or crepe pan over medium heat and lightly grease it with butter or cooking spray. Pour a small amount of crepe batter into the skillet, swirling it around to coat the bottom evenly. Cook for about 2 minutes until the edges start to lift and the crepe is lightly browned on the bottom. Flip and cook for another 1-2 minutes on the other side. Repeat with the remaining batter, stacking the crepes on a plate. In a bowl, combine the mascarpone cheese, powdered sugar, and vanilla extract. Mix until smooth and creamy. Spread a generous spoonful of the mascarpone mixture onto each crepe. Place a few slices of apricots on top of the mascarpone mixture. Fold the crepes in half and then in half again to form triangles. In a small saucepan, heat the apricot preserves over low heat until it becomes a thin glaze. Drizzle the apricot glaze over the crepes and garnish with powdered sugar and fresh mint leaves if desired. Serve the Whipped Mascarpone and Apricot Crepes warm and enjoy!
