A delicious one-pot meal combining chicken, rice, and vibrant fajita flavors, cooked to perfection in the Instant Pot.
Ingredients: 1 lb boneless, skinless chicken breasts, sliced. 1 cup bell peppers, thinly sliced assorted colors. 1 cup onion, thinly sliced. 1 cup long-grain white rice. 1 can 14 oz diced tomatoes, undrained. 1 cup chicken broth. 2 tablespoons fajita seasoning. 1 teaspoon garlic powder. 1 teaspoon onion powder. 1 teaspoon cumin. 1/2 teaspoon chili powder. 1/2 teaspoon paprika. Salt and pepper to taste. 1 tablespoon olive oil.
Instructions: Warm up the olive oil in the Instant Pot by pressing "Saute." Put in the sliced chicken breasts and cook until they turn brown. Put in the onions and bell peppers and saut them until they get soft. Put in the chicken broth, rice, diced tomatoes, garlic powder, onion powder, cumin, chili powder, paprika, salt, and pepper. Mix well. Put the lid on top of the Instant Pot and turn the valve to "Sealing." It will then cook on high pressure for 8 minutes. After you're done, let the pressure drop naturally for 5 minutes. Then, manually release any pressure that is still there. Take off the lid, use a fork to fluff up the rice, and serve hot. If you want, you can add fresh cilantro, lime wedges, and shredded cheese as a garnish.
