A tasty change from regular ice cream, these Italian Crema Popsicles are a must-try. They're rich and creamy, with a hint of vanilla flavor. They're great for hot summer days or any time you want a cool treat.
Ingredients: 2 cups heavy cream. 1 cup whole milk. 3/4 cup granulated sugar. 4 egg yolks. 1 teaspoon vanilla extract. Pinch of salt.
Instructions: In a saucepan, combine heavy cream and milk over medium heat. Heat until just simmering, then remove from heat. In a separate bowl, whisk together egg yolks and sugar until well combined. Slowly pour the warm cream mixture into the egg yolk mixture, whisking constantly to temper the eggs. Return the mixture to the saucepan and cook over low heat, stirring constantly, until it thickens and coats the back of a spoon, about 5-7 minutes. Do not let it boil. Remove from heat and stir in vanilla extract and a pinch of salt. Let cool slightly. Pour the mixture into popsicle molds, insert sticks, and freeze until solid, preferably overnight. Once frozen, run the molds under warm water for a few seconds to release the popsicles. Serve immediately.
