Ingredients: 1 lb lean ground beef. 1 onion, diced. 1 bell pepper, diced. 2 cloves garlic, minced. 1 can 14 oz diced tomatoes, drained. 1 can 15 oz black beans, drained and rinsed. 1 cup frozen corn kernels. 1 cup cooked brown rice. 1 cup shredded reduced-fat cheddar cheese. 1 teaspoon chili powder. 1/2 teaspoon cumin. Salt and pepper to taste.
Instructions: Warm the oven up to 190C 375F. Warm up the ground beef in a big pan over medium-low heat until it turns brown. Slice the onion, bell pepper, and garlic and add them. Cook the vegetables until they get soft. Add black beans, corn, cooked rice, chili powder, cumin, salt, and pepper, then mix them in. Let the flavors mix for 5 minutes while you cook. Put the mixture in a casserole dish. Add some shreds of cheese on top. Put it in an oven that is already hot and bake for 20 to 25 minutes, or until the cheese melts and bubbles. Enjoy while hot!
