Ingredients: 2 cups raspberries. 2 tablespoons chia seeds. 2 tablespoons water. 1-2 tablespoons low-carb sweetener like erythritol or stevia, to taste. 1 teaspoon lemon juice.
Instructions: Put raspberries and water in a saucepan. For about 5 minutes, or until the raspberries break down, cook on medium heat. Use a fork or potato masher to mash the raspberries until you get the consistency you want. Add the sweetener, lemon juice, and chia seeds and mix them in. Stir the food often for another 5 minutes of cooking. Take it off the heat and let it cool for ten to fifteen minutes. As it cools, the jam will get thicker. Put it in a jar or other container and put it in the fridge until you're ready to use it.

After a few minutes of cooling, move the jam to a glass jar or other container. Before putting the jam in the refrigerator, let it cool completely. As it cools, it will get thicker still. Savor your homemade apricot chia jam as a topping for desserts or as a spread on toast or yogurt!
