Ingredients: 2 cups fresh apricots, pitted and chopped. 1/4 cup chia seeds. 1/4 cup honey or maple syrup. 1 tablespoon lemon juice. 1/2 teaspoon vanilla extract.
Instructions: The chopped apricots, lemon juice, and honey or maple syrup should all be combined in a medium saucepan. Cook, stirring occasionally, over medium heat for approximately 10 minutes, or until the mixture thickens and the apricots break down. Take off the heat and mix in the vanilla extract and chia seeds. After a few minutes of cooling, move the jam to a glass jar or other container. Before putting the jam in the refrigerator, let it cool completely. As it cools, it will get thicker still. Savor your homemade apricot chia jam as a topping for desserts or as a spread on toast or yogurt!

Ingredients: 2 cups fresh strawberries, hulled and chopped. 1/4 cup maple syrup or honey. 2 tablespoons chia seeds. 1 tablespoon lemon juice. 1/2 teaspoon vanilla extract.
Instructions: In a medium saucepan, combine the chopped strawberries and maple syrup or honey over medium heat. Stir occasionally and let the mixture simmer for about 5-7 minutes, until the strawberries break down and become soft. Remove the saucepan from heat and mash the strawberries with a fork or potato masher to your desired consistency. Stir in the chia seeds, lemon juice, and vanilla extract. Mix well. Allow the mixture to cool for 10-15 minutes, stirring occasionally. The chia seeds will absorb some liquid and thicken the jam. Transfer the jam to a clean glass jar or container and let it cool to room temperature. Once cooled, seal the jar and refrigerate for at least 2-3 hours or overnight to allow the jam to set. Enjoy your homemade strawberry chia seed jam on toast, yogurt, or as a topping for various dishes!
