I made my fav coconut curry for dinner tonight. I was so hungry when I got home from work and this meal is so quick and easy it was the perfect fix. Adding bell peppers and extra ginger to this dish makes it so fresh it’s perfect for a spring meal (even though it’s usually my go to in the fall/ winter). ⠀

I cooked the shrimp in a pan with lemon, avocado oil, and garlic powder and then tossed them in with a Caesar salad mix I bought at @target. I spent the day outside enjoying the sunshine, and after this fresh meal I’m really feeling all the summer vibes 🌞. ⠀

This refreshing grape mint tomato salad from Ally's Kitchen Cookbook is a delightful combination of sweet and savory flavors. The juicy red grapes and cherry tomatoes are complemented by the fresh mint leaves and the tangy balsamic vinaigrette. It's a perfect side dish for a summer meal or a light and healthy snack.
Ingredients: 2 cups red grapes, halved. 2 cups cherry tomatoes, halved. 1/2 cup fresh mint leaves, chopped. 1/4 cup red onion, thinly sliced. 1/4 cup feta cheese, crumbled. 2 tablespoons extra-virgin olive oil. 2 tablespoons balsamic vinegar. Salt and pepper to taste.
Instructions: Put the cherry tomatoes and red grapes that have been cut in half in a large bowl. Cut up the mint leaves and cut the red onion into very thin slices. Add the extra-virgin olive oil and balsamic vinegar to a different small bowl and mix them together and whisk. Pour the dressing over the salad and mix it all together. On top of the salad, crumble some feta cheese. Add pepper and salt to taste. Put it in the fridge for at least 30 minutes before you serve it so the flavors can mix. Enjoy! Serve cold.

A delicious summer salad with the sweet taste of ripe tomatoes and plums, the earthy taste of roasted beets, and the creamy texture of feta cheese. This salad is a great side dish for summer meals. It's dressed with a simple balsamic vinaigrette.
Ingredients: 2 large tomatoes, sliced. 2 medium beets, roasted and sliced. 2 plums, sliced. 1/2 cup crumbled feta cheese. 1/4 cup fresh basil leaves, torn. 2 tablespoons extra-virgin olive oil. 1 tablespoon balsamic vinegar. Salt and pepper to taste.
Instructions: Put the tomato slices, roasted beet slices, and plum slices on a large serving platter. Diced feta cheese and torn basil leaves and sprinkle them on top of the fruits and vegetables. To make the dressing, mix the olive oil and balsamic vinegar in a small bowl with a whisk. Put it on top of the salad. Add pepper and salt to taste. Toss the salad gently to mix all the ingredients together. Serve right away as a cool summer salad.
