Ingredients: 1 cup unsweetened applesauce. 1/2 cup butter, softened. 1 cup brown sugar. 1 egg. 2 cups all-purpose flour. 1 teaspoon baking soda. 1 teaspoon ground cinnamon. 1/2 teaspoon ground nutmeg. 1/4 teaspoon salt. 1 cup raisins or dried cranberries. 1/2 cup chopped walnuts or pecans optional.
Instructions: Preheat the oven to 350F 175C and line baking sheets with parchment paper. In a large mixing bowl, cream together the softened butter and brown sugar until smooth. Beat in the egg and unsweetened applesauce until well combined. In a separate bowl, whisk together the flour, baking soda, cinnamon, nutmeg, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Fold in the raisins or dried cranberries, and the chopped nuts if using. Drop spoonfuls of cookie dough onto the prepared baking sheets, leaving space between each cookie. Bake in the preheated oven for 10-12 minutes, or until the cookies are lightly golden around the edges. Remove from the oven and allow the cookies to cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.
