A vibrant and nutritious salad featuring the dueling flavors of creamy avocado and roasted sweet potatoes, combined with hearty kale and a sweet balsamic dressing. Topped with crunchy pumpkin seeds, chewy dried cranberries, and rich pecans, this salad is a delightful mix of textures and flavors.
Ingredients: 2 ripe avocados. 2 medium sweet potatoes. 1 bunch kale. 1/4 cup olive oil. 2 tablespoons balsamic vinegar. 1 tablespoon maple syrup. Salt and pepper to taste. 1/4 cup pumpkin seeds. 1/4 cup dried cranberries. 1/4 cup chopped pecans.
Instructions: Preheat oven to 400F 200C. Peel and cube the sweet potatoes. Toss sweet potatoes with 2 tablespoons of olive oil, salt, and pepper. Spread sweet potatoes on a baking sheet and roast for 25-30 minutes, or until tender and slightly caramelized. While sweet potatoes are roasting, prepare the kale by removing the stems and chopping leaves into bite-sized pieces. Massage kale with remaining olive oil for about 2 minutes to soften. In a small bowl, whisk together balsamic vinegar, maple syrup, salt, and pepper to make the dressing. Once sweet potatoes are done, allow them to cool slightly. Slice avocados and toss gently with kale. Add roasted sweet potatoes, pumpkin seeds, dried cranberries, and chopped pecans to the salad. Drizzle dressing over the salad and toss to combine. Serve immediately or refrigerate until ready to serve.
