These vegan chocolate-covered coconut caramel bites are a great way to satisfy your sweet tooth because they have both chewy caramel and rich chocolate. You can make them quickly and enjoy them right away!

Ingredients: 1 cup shredded coconut. 1/2 cup dates, pitted. 1/4 cup maple syrup. 1/4 cup coconut oil. 1/2 teaspoon vanilla extract. 1/4 teaspoon sea salt. 1/2 cup dairy-free chocolate chips.

Instructions: In a food processor, blend shredded coconut until finely chopped. Add dates, maple syrup, coconut oil, vanilla extract, and sea salt. Blend until a sticky dough forms. Line a baking sheet with parchment paper. Roll the dough into small balls and place them on the baking sheet. Place in the freezer for 30 minutes to firm up. In the meantime, melt chocolate chips in a microwave-safe bowl in 30-second intervals, stirring in between until smooth. Remove coconut caramel bites from the freezer and dip each one into the melted chocolate, coating evenly. Place back on the baking sheet and return to the freezer for another 15-20 minutes until the chocolate sets. Once set, enjoy your delicious vegan chocolate covered coconut caramel bites!
