The earthy taste of kale, the sweetness of balsamic onions, and the gooeyness of melted cheese come together in this grilled cheese sandwich, which is made with crispy bread slices.
Ingredients: 2 slices of bread. 1 cup kale, chopped. 1/2 onion, thinly sliced. 2 tablespoons balsamic vinegar. 1/2 cup shredded cheese cheddar or mozzarella. 2 tablespoons butter.
Instructions: Put one tablespoon of butter in a pan and set it over medium-low heat. It will take about 5 minutes of cooking after adding the sliced onions until the onions turn caramelized. Add the vinegar to the onions and cook for two more minutes, until the vinegar is fully absorbed. Put away. Put one slice of bread in the same skillet with the rest of the butter. Add more cheese, caramelized onions, shredded cheese, and kale on top. Put the other piece of bread on top. About two to three minutes on each side, or until both sides are golden brown and the cheese is melted. Cross-cut the sandwich and serve it hot.
