Ingredients: 1 1/2 cups almond milk. 1/4 cup maple syrup. 1/4 cup coconut sugar. 1 tsp vanilla extract. 1 tsp ground cinnamon. 1/4 tsp ground nutmeg. 1/4 tsp salt. 1/4 cup coconut oil, melted. 1/2 cup crushed vegan snickerdoodle cookies.
Instructions: In a blender, combine almond milk, maple syrup, coconut sugar, vanilla extract, ground cinnamon, ground nutmeg, salt, and melted coconut oil. Blend until smooth. Pour the mixture into popsicle molds, leaving a little space at the top for expansion. Sprinkle crushed vegan snickerdoodle cookies into each mold, gently pressing them into the mixture. Insert popsicle sticks into the molds and freeze for at least 4 hours, or until completely set. Once frozen, carefully remove the popsicles from the molds by running them under warm water for a few seconds. Serve immediately and enjoy!

Ingredients: 2 medium sweet potatoes, peeled and cubed. 2 cups all-purpose flour, plus extra for dusting. 1/2 teaspoon salt.
Instructions: Boil the sweet potatoes in a pot of water until fork-tender, about 15 minutes. Drain the sweet potatoes and mash them until smooth. In a large mixing bowl, combine the mashed sweet potatoes, flour, and salt. Mix until a dough forms. Divide the dough into small portions and roll each portion into a long rope on a floured surface. Cut the ropes into small pieces and roll each piece along the tines of a fork to create ridges. Bring a large pot of salted water to a boil. Cook the gnocchi in batches until they float to the surface, about 2-3 minutes. Remove the gnocchi with a slotted spoon and transfer to a serving dish. Serve hot with your favorite vegan sauce or toppings.

Ingredients: 1 tbsp olive oil. 2 leeks, sliced. 3 cloves garlic, minced. 4 cups vegetable broth. 4 cups diced potatoes. 1 cup raw cashews, soaked for 4 hours or overnight. 4 cups fresh spinach. 1 cup unsweetened almond milk. Salt and pepper to taste.
Instructions: In a large pot, heat olive oil over medium heat. Add leeks and garlic, saut until softened, about 5 minutes. Add vegetable broth and diced potatoes. Bring to a boil, then reduce heat and simmer until potatoes are tender, about 15 minutes. In a blender, combine soaked cashews and almond milk. Blend until smooth and creamy. Once potatoes are tender, add spinach to the pot. Stir until spinach is wilted. Stir in the cashew cream mixture. Season with salt and pepper to taste. A tasty change was made to the classic New York Times recipe for chocolate chip cookies to make them gluten-free. Almond and coconut flours give them a rich, nutty taste without any gluten. With a glass of dairy-free milk, these cookies taste great!
Ingredients: 2 cups almond flour. 1/2 cup coconut flour. 1 teaspoon baking soda. 1/2 teaspoon salt. 1/2 cup coconut oil, melted. 1/2 cup maple syrup. 2 teaspoons vanilla extract. 1 cup dairy-free chocolate chips.
Instructions: Warm the oven up to 175F 350C. Mix almond flour, coconut flour, baking soda, and salt in a large bowl with a whisk. Melt the coconut oil and mix it with the maple syrup and vanilla extract. Mix everything together well. Add the chocolate chips and mix them in. Place dough on a baking sheet that has been lined with parchment paper, leaving space between each cookie. Put it in the oven for 10 to 12 minutes, or until the edges turn golden brown. Let the cookies cool for 5 minutes on the baking sheet before moving them to a wire rack to cool all the way.

Instructions: Preheat your oven to 400F 200C. Place the cauliflower florets and peeled garlic cloves on a baking sheet. Drizzle with olive oil and toss to coat evenly. Roast in the preheated oven for 25-30 minutes, or until the cauliflower is tender and slightly browned. Transfer the roasted cauliflower and garlic to a food processor or blender. Add almond milk, nutritional yeast, lemon juice, salt, and pepper. Blend until smooth and creamy, scraping down the sides as needed. Taste and adjust seasoning if necessary. Transfer the mashed cauliflower to a serving bowl, garnish with fresh chives or parsley if desired, and serve hot.
