Instructions: Cook wild rice blend according to package instructions. In a large pot, saut chicken, carrots, celery, onion, and garlic in butter until vegetables are tender. Ingredients: 1 cup wild rice. 8 cups vegetable broth. 1 cup diced carrots. 1 cup diced celery. 1 cup diced onion. 3 cloves garlic, minced. 1 can 15 oz white beans, drained and rinsed. 1 teaspoon dried thyme. 1 teaspoon dried rosemary. 1 teaspoon smoked paprika. 1/2 teaspoon black pepper. 1/4 cup all-purpose flour. 1/4 cup unsalted butter. 3 cups unsweetened almond milk. Salt to taste. Chopped fresh parsley for garnish.
Instructions: After rinsing with cold water, drain the wild rice. Put the vegetable broth and wild rice in a big pot. After bringing to a boil, lower the heat, cover, and simmer the rice for 45 to 50 minutes, or until it is soft. Melt butter in a different pan over a medium heat. Add the onion, celery, and chopped carrots. Saut the veggies until they become soft. To the sauted vegetables, add minced garlic, dried thyme, dried rosemary, smoked paprika, and black pepper. Mix thoroughly. To coat the vegetable mixture, sprinkle flour over it and stir. Cook for two to three minutes to get rid of the taste of raw flour. Add almond milk slowly, being careful not to let any lumps form. Cook the mixture until it thickens further. Stir the cooked wild rice into the thickened vegetable mixture. Add the white beans and taste and adjust the salt. Allow the soup to continue simmering for ten to fifteen minutes to let the flavors combine. Garnish with freshly chopped parsley and serve hot.
