Ingredients: 2 cups shredded leftover turkey. 1 onion, diced. 2 cloves garlic, minced. 1 bell pepper, chopped. 1 zucchini, diced. 1 can diced tomatoes. 4 cups chicken broth. 1 teaspoon cumin. 1 teaspoon chili powder. 1 teaspoon dried oregano. Salt and pepper to taste. Fresh cilantro, chopped, for garnish. Avocado slices, for topping. Lime wedges, for serving.
Instructions: In a large pot, saut diced onion and minced garlic until fragrant. Add chopped bell pepper and zucchini, cook until vegetables soften.
