Ingredients: 4 boneless, skinless chicken thighs. 2 tablespoons finely chopped lemongrass. 2 cloves garlic, minced. 1 tablespoon grated fresh turmeric. 1 tablespoon fish sauce. 1 tablespoon soy sauce. 1 tablespoon vegetable oil. 1 teaspoon sugar. 1/4 teaspoon black pepper.
Instructions: In a bowl, combine lemongrass, garlic, turmeric, fish sauce, soy sauce, vegetable oil, sugar, and black pepper to make marinade. Add chicken thighs to the marinade, ensuring they are well coated. Marinate for at least 1 hour or overnight in the refrigerator. Preheat grill to medium-high heat. Grill chicken thighs for 5-7 minutes per side, or until cooked through and grill marks form. Serve hot with rice and your favorite dipping sauce.
