I rightly name it paradise island bread. So originally I used nisperos in the recipe which are loquats that grow abundantly all over Ibiza in late spring, but lately I’ve revisited the recipe as loquats are not quite in season and bumped it up with fresh pineapple slices and coconut. You can leave the cake naked but to make it extra special and decadent, I like to drizzle over a dairy free coconut yogurt with vanilla pod and fresh passionfruit.
