Best ever Vodka sauce I can't believe how good this creamy vodka sauce came out. I didn't mean to nail it so hard. It just worked out that way. Here's what I did: - Sauteed onions in xvoo - Added chopped smoked bacon, cooked until fat was rendered - Added chopped garlic, carrots, celery - Sweated veggies together until soft - Added canned tomatoes - Spice blend: basil, oregano, garlic powder, onion powder, s&p - Added vodka and water - Simmered until veggies were cooked through - Stick blendered smooth - Added heavy cream, and cheeses: parmesan and provolone - Whisked together and simmered uncovered for about 30 minutes, scraping bottom of pot to loosen stuck bits Adjust water and salt as necessary For some reason, the vodka, provolone, and smoked bacon flavors all came together to be intense and flavorful at the same time. I usually avoid cooking with provolone because of its intense and usually overwhelming flavor, but this time it really brought the sauce together. Served over cheese ravioli with a side of sausage, spinach, and a savory citrus salad to add a contrasting bright note. Let me know if this works for you! Happy Eating!

Indulge in the rich flavors of this one-pot chicken pasta dish featuring a creamy vodka sauce, sweet sun-dried tomatoes, and vibrant spinach. Perfect for a cozy dinner at home!
Ingredients: 1 lb boneless, skinless chicken breasts, diced. 2 tbsp olive oil. 3 cloves garlic, minced. 1/2 cup vodka. 1 cup chicken broth. 1 cup heavy cream. 1/2 cup grated Parmesan cheese. 8 oz penne pasta. 1/2 cup sun-dried tomatoes, chopped. 2 cups fresh spinach leaves. Salt and pepper to taste. Fresh basil leaves for garnish optional.
Instructions: Warm up the olive oil in a big pan over medium-low heat. It will take about 5 to 7 minutes of cooking after adding the diced chicken until it is browned and fully cooked. Add the minced garlic and cook for one more minute, until the garlic smells good. Add the vodka and let it cook for two to three minutes to get rid of the alcohol. Heavy cream, grated Parmesan cheese, and chicken broth should all be mixed in. Bring to a low boil. Put in the sun-dried tomatoes and penne pasta. Stirring every now and then, cook for about 10 to 12 minutes, or until the pasta is soft. Put in the fresh spinach leaves and cook for about two minutes, until they wilt. Add pepper and salt to taste. If you want, you can add fresh basil leaves as a garnish. Enjoy while hot!

Penne alla Vodka is a classic Italian-American dish featuring penne pasta tossed in a creamy tomato sauce infused with vodka. It's rich, flavorful, and satisfying, making it a perfect comfort food for any occasion.
Ingredients: 12 oz penne pasta. 2 tbsp olive oil. 4 cloves garlic, minced. 1/4 tsp red pepper flakes. 1/2 cup vodka. 1 can 14 oz crushed tomatoes. 1/2 cup heavy cream. Salt and pepper to taste. Fresh basil leaves, chopped for garnish. Grated Parmesan cheese optional, for serving.
Instructions: Follow the directions on the package to cook the penne pasta until it is al dente. Remove the water and set it aside. Warm up the olive oil in a big pan over medium-low heat. Cut up some garlic and red pepper flakes and add them. For about one minute, cook until the garlic smells good. Carefully add the vodka to the pan. After two to three minutes, let it cook down so that the alcohol is gone. Add the crushed tomatoes and let the sauce cook for 5 to 7 minutes so the flavors can blend. Turn down the heat and add the heavy cream. Keep cooking for another two to three minutes, until the sauce is smooth and hot all the way through. Add pepper and salt to taste. Toss the cooked penne pasta in the skillet with the sauce until it is covered all over. Add chopped fresh basil leaves on top, and serve hot. If you want to add more flavor, you can serve it with grated Parmesan cheese.
