E’ da un po di tempo che non parlo di ricette. Cucinare è veramente un'emozione che si ripete ogni volta che ci si mette ai fornelli. In questo caso ho rifatto una vecchissima ricetta napoletana, Timballo di pasta patate e provola, una prelibatezza. Per 4 persone ci vuole: 500 gr. di pasta 5 patate 1 cipolla pancetta qualche pomodorino (io ho usato quelli del mio orto) olio basilico in foglia fresco sale pepe provola (io ho usato quella piccante) parmigiano scorza di parmigiano
Lavare e ridurre a dadi le patate. Soffriggere la pancetta con olio e cipolla Aggiungere i pomodorini a pezzetti per 2-3 minuti. Aggiungere le patate e acqua che porterete a bollore mentre incorporate le scorzette di parmigiano e il parmigiano grattugiato salare. Quando le patate saranno cotte aggiungete la pasta precedentemente cotta per soli due o tre minuti, fatto questo riversate il tutto in un contenitore da forno con l'aggiunta della provola. Infornate a 200 gradi per 15 minuti.
