Pizza with roasted eggplant
My Lunch Box mum bought from Chong Pang during her trip there. She chose sweet & sour fish nuggets (็ณ้้ฑผ), stewed eggplant ๐ and a piece of sweet & sour pork chop with sesame seeds to go with the fragrant jasmine rice. I like the fish nuggets ๐ as they are still crispy even though coated with sauce.
Escalivada is a traditional Catalan food made with roasted peppers, aubergine, onions and some times can include tomatoes. It's commonly eaten as a side or as a dish itself, usually on a loaf of bread with rubbed tomato and olive oil.
The word "escalivada" comes from the verb "escalivar", which in Catalan means the way of cooking it slowly on embers for a char-grilled result. Nowadays, many people at home cook it in the oven instead. It's often accompanied with salted anchovies.
