Ingredients: 2 cans 400ml each full-fat coconut milk. 1/2 cup maple syrup or agave nectar. 1 teaspoon vanilla extract. 1/2 cup shredded coconut optional.
Instructions: In a blender, combine coconut milk, maple syrup or agave nectar, and vanilla extract. Blend until smooth. If desired, stir in shredded coconut for added texture. Pour the mixture into popsicle molds. Insert sticks and freeze for at least 4 hours or until solid. Once frozen, run warm water over the molds to release the popsicles.
