This chicken recipe only needs one pot and is quick and easy. It's great for busy students. You can have a tasty and healthy meal on the table quickly because it doesn't take long to prepare or cook.
Ingredients: 4 boneless, skinless chicken breasts. 1 tablespoon olive oil. 1 onion, chopped. 2 cloves garlic, minced. 1 bell pepper, chopped. 1 cup diced tomatoes. 1 cup chicken broth. 1 teaspoon dried oregano. 1 teaspoon dried basil. Salt and pepper to taste. 1 cup rice.
Instructions: Warm up a big pan with olive oil over medium-low heat. After you add the chicken breasts, cook for about 5 minutes on each side until both sides are browned. Take it out of the pan and set it aside. To the same pan, add the minced garlic, chopped onion, and chopped bell pepper. About 3 minutes of cooking will soften the food. Chicken broth, dried oregano and basil, salt, and pepper should all be stirred in now. Put the chicken breasts back in the pan. Put the lid on top and cook for 20 minutes. Cover the pan and let it cook for another 15 to 20 minutes, or until the rice is done and the chicken is soft. Enjoy while hot!
