This is raw pad thai, a truly delicious recipe from @madeleine_shaw_ I sampled it at @wholefoodslondon at her #gettheglow event. It’s incredibly delicious for something so simple. A real case of eating the rainbow! These veggies are drenched in just the most tasty dressing which takes the dish to a really special level. If you don’t have a spiraliser, you can use a julienne peeler instead. But, actually, try and buy a spiraliser as they are a great addition to your healthy kitchen!

Supper tonight was courgetti (aka zoodles...I love that word!) with asparagus, prawns and garlic. The courgetti is raw but the asparagus and prawns were quickly fried in coconut oil. A light and delicious supper!
