A simple and tasty gluten-free side dish made with cherry tomatoes and asparagus that have been roasted with garlic and olive oil.

Ingredients: 1 bunch asparagus, trimmed. 1 pint cherry tomatoes. 3 cloves garlic, minced. 2 tablespoons olive oil. Salt and pepper to taste.

Instructions: Turn on the oven and heat it up to 400F 200C. Put the cherry tomatoes and asparagus that have been trimmed on a baking sheet that has been lined with parchment paper. Pour olive oil over the vegetables and season with salt, pepper, and minced garlic. Add everything to the bowl and mix it all together. Put the asparagus in an oven that has already been heated and roast it for 15 to 20 minutes, or until it is soft and slightly caramelized. Enjoy while hot!

Tabbouleh Salad is a refreshing Middle Eastern salad made with fresh herbs, tomatoes, and bulgur wheat, tossed in a zesty lemon and olive oil dressing. It's a light and healthy dish perfect for a summer day.

Ingredients: 1 cup finely chopped fresh parsley. 1/4 cup finely chopped fresh mint leaves. 2 ripe tomatoes, diced. 1/2 cup finely chopped red onion. 1/4 cup bulgur wheat. 1/4 cup lemon juice. 1/4 cup extra-virgin olive oil. Salt and pepper to taste.

Instructions: Place the bulgur wheat in a bowl and cover it with hot water. Let it sit for about 10 minutes until it softens. Drain any excess water and fluff it with a fork. In a large mixing bowl, combine the chopped parsley, mint, diced tomatoes, and red onion. Add the softened bulgur wheat to the bowl and mix well. In a separate small bowl, whisk together the lemon juice, olive oil, salt, and pepper. Pour the dressing over the salad and toss to combine all the ingredients. Refrigerate the Tabbouleh Salad for at least 30 minutes before serving to allow the flavors to meld. Serve chilled and enjoy!

Ingredients: 2 cups all-purpose flour. 1 cup granulated sugar. 1/2 cup extra-virgin olive oil. 2 large eggs. 1 cup buttermilk. 1 lemon zest and juice. 1 teaspoon baking powder. 1/2 teaspoon baking soda. 1/2 teaspoon salt. 1/2 teaspoon vanilla extract.

Instructions: Preheat your oven to 350F 175C and line a muffin tin with paper liners. In a large mixing bowl, combine the flour, sugar, baking powder, baking soda, and salt. In a separate bowl, whisk together the olive oil, eggs, buttermilk, lemon zest, lemon juice, and vanilla extract. Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix; it's okay if there are a few lumps. Fill each muffin cup about 2/3 full with the batter. Bake in the preheated oven for 18-20 minutes or until a toothpick inserted into the center of a muffin comes out clean. Remove the muffins from the oven and allow them to cool in the tin for a few minutes before transferring them to a wire rack to cool completely. Once cooled, you can optionally drizzle with a lemon glaze made from powdered sugar and lemon juice for extra flavor. Enjoy your delicious Lemon Olive Oil Muffins!
