Ingredients: 1 sheet of puff pastry, thawed. 2 medium apples, cored and thinly sliced. 1/4 cup cajeta Mexican caramel sauce. 1 tbsp lemon juice. 1/4 tsp ground cinnamon. 1/8 tsp ground nutmeg. 1 egg, beaten for egg wash.
Instructions: Preheat oven to 375F 190C. Roll out the puff pastry and cut it into 6 equal squares. Place the pastry squares on a baking sheet lined with parchment paper. In a bowl, toss the apple slices with lemon juice, cinnamon, and nutmeg. Arrange the seasoned apple slices on top of each puff pastry square, leaving a border around the edges. Drizzle 1-2 teaspoons of cajeta over the apple slices on each tartlet. Fold the edges of the pastry squares over the apples, creating a rustic tartlet shape. Brush the edges of the pastry with the beaten egg. Bake in the preheated oven for 20-25 minutes, or until the pastry is golden brown and the apples are tender. Remove from the oven and let cool slightly before serving. Optional: Drizzle additional cajeta over the tartlets before serving.

Ingredients: 2 cups almond flour. 1/2 cup coconut flour. 1/2 cup tapioca flour. 1/2 cup dried cranberries. 1/2 cup dried apricots, chopped. 1/2 cup chopped walnuts. 1/4 cup coconut oil, melted. 4 eggs. 1/4 cup honey. 1 teaspoon ground cinnamon. 1/2 teaspoon ground nutmeg. 1/2 teaspoon ground ginger. 1/2 teaspoon baking soda. 1/2 teaspoon salt. 1 teaspoon vanilla extract. Zest of one orange.
Instructions: Set the oven temperature to 175C 350F. Grease a loaf pan and place parchment paper inside. Almond flour, coconut flour, tapioca flour, chopped walnuts, dried cranberries, and dried apricots should all be combined in a big mixing bowl. Melted coconut oil, eggs, honey, ground nutmeg, ground ginger, baking soda, salt, vanilla extract, and orange zest should all be combined in a different bowl. After adding the wet ingredients to the dry ingredients, thoroughly mix them together. After preheating the loaf pan, pour the batter into it and level the top. Bake for 45 to 50 minutes in a preheated oven, or until a toothpick inserted in the center comes out clean. After taking the loaf out of the oven, let it cool in the pan for ten minutes before moving it to a wire rack to finish cooling. Slice and savor your Paleo Spiced Fruit Loaf after it has cooled!

Zest of 1 orange. Juice of 1 orange. 1/2 cup powdered sugar.
Instructions: Set the oven to 350F 175C and heat it up. Butter and flour a cake pan. Put pumpkin puree, brown sugar, vegetable oil, and almond milk in a large bowl and mix them together. Spices like cinnamon, ginger, nutmeg, and baking soda should be added along with flour. Don't mix any further than that. Pour the batter into the cake pan that has been ready, and make the top smooth. Put it in the oven and bake for 30 to 35 minutes, or until a toothpick stuck in the middle comes out clean. Before frosting, let the cake cool all the way down. To make the frosting, mix the tahini, maple syrup, orange juice, and orange zest in a bowl using a whisk. Add powdered sugar little by little until the texture you want is reached. Frost the cake after it has cooled. Cut it up and serve!
