A refreshing and hearty Mediterranean-inspired couscous salad that's perfect for a light meal or a side dish. Packed with fresh veggies, herbs, and a zesty dressing, it's a delightful vegan option that will satisfy your taste buds.
Ingredients: 1 cup couscous. 1 cups vegetable broth. 1 cup cherry tomatoes, halved. 1 cup cucumber, diced. cup red bell pepper, chopped. cup red onion, finely chopped. cup Kalamata olives, pitted and sliced. cup fresh parsley, chopped. cup fresh mint leaves, chopped. 3 tablespoons extra-virgin olive oil. 2 tablespoons lemon juice. 2 cloves garlic, minced. Salt and black pepper to taste.
Instructions: Bring the vegetable broth to a boil in a medium-sized saucepan. When it starts to boil, take it off the heat and add the couscous. Put the lid on top and wait 5 minutes. The cucumber, red bell pepper, red onion, Kalamata olives, parsley, and mint should all be put in the same bowl. Mix the extra-virgin olive oil, lemon juice, garlic powder, salt, and black pepper in a small bowl using a whisk. Put the dressing on top of the vegetables and couscous. Add everything to the bowl and mix it well. Put the salad in the fridge for at least 30 minutes before you serve it so that the flavors can mix. Une salade fraîche et savoureuse à base de couscous perlé, de fenouil croquant et d'herbes aromatiques. Parfait pour une entrée légère ou un accompagnement estival.
Ingredients: 200g de couscous perl. 1 bulbe de fenouil. 1 citron. 2 cuillres soupe d'huile d'olive. 1 bouquet de persil frais. 1 bouquet de coriandre frache. Sel et poivre au got.
