Crispy Prawn Fritters, which are also called Zha Xia Bing, are a tasty seafood snack or appetizer. The light and crispy batter on these fritters covers juicy prawns that are great for dipping in sweet chili sauce. These are great to add to any meal or party spread.
Ingredients: 500g prawns, peeled and deveined. 1 cup all-purpose flour. 2 tablespoons cornstarch. 1 teaspoon baking powder. 1 teaspoon salt. 1 teaspoon black pepper. 1 egg, beaten. 1 cup cold water. 2 cups vegetable oil for frying. Sweet chili sauce for dipping.
Instructions: Put flour, cornstarch, baking powder, salt, and black pepper in a bowl and mix them together. Add cold water and an egg that has been beaten to the dry mix. Mix until it's smooth. Put vegetable oil in a large skillet or deep fryer and heat it over medium-high heat. Make sure that every prawn is fully covered in batter before you dunk it. Put the prawns carefully into the hot oil and fry for two to three minutes on each side, until they are golden brown. Take the prawn fritters out of the oil and let them drain on paper towels to get rid of the extra oil. Serve hot with sweet chili sauce on the side.
