These Spicy Red Quinoa Pesto Bites are a tasty, gluten-free snack or appetizer that is full of flavor. When you mix red quinoa, sun-dried tomatoes, basil, and spices, you get a tasty and healthy treat.
Ingredients: 1 cup cooked red quinoa. 1/4 cup sun-dried tomatoes. 1/4 cup fresh basil leaves. 2 tablespoons pine nuts. 2 cloves garlic. 1 tablespoon nutritional yeast. 1/4 teaspoon red pepper flakes. Salt to taste. Olive oil for drizzling.
Instructions: Warm the oven up to 175F 350C. Red quinoa that has been cooked, sun-dried tomatoes, basil leaves, pine nuts, garlic, nutritional yeast, red pepper flakes, and salt should all be put in a food processor. Pulse until everything is well mixed and a paste forms. Take small amounts of the mixture and roll them into balls that are easy to eat. Put the balls on a baking sheet that has parchment paper on it. Put olive oil on top of the balls. Put the bites in an oven that has already been heated for 15 to 20 minutes, or until they are firm and golden. Take it out of the oven and let it cool down a bit before you serve it.
